A kitchen novice cooking for a week on 80 Day Obsession

This past week, I was home for the week on PTO, taking just a little time to relax and taking care of life things (doctors appointments, dentist appointment, etc). Since this was my first week NOT traveling since starting the 80 Day Obsession program, I was very excited to eat cooked meals and not my go-to of canned tuna or deli meat. I had a whole entire kitchen for the week and I didn’t know what to do with myself (partially because I’m really not good at cooking). So I planned (duh) out our meals for the whole week with this beautiful color coded spreadsheet I had time to develop to plan and track my meals with my time off.
A plan was developed, recipes were picked, and groceries were purchased, but I had no idea how things were going to turn out. I was cooking with new ingredients that I’d never used before like coconut oil, coconut flour and coconut sugar. For some of the other more “out there” ingredients, I just used the real thing. I mean, will 1 tbsp of ghee really help all that much instead of butter? I guess I won’t find out. I still used some discretion and my recipes weren’t perfect, but I tried my best to stick to my allowed foods and container counts.

The Menu

SundayBaked Coconut Shrimp – my mom invited us over and made these shrimp since they were in compliance with my nutrition plan. Neither of us could find whole wheat panko, so regular panko was used. Oh well. They were delicious!

Monday – we received a grill for Christmas that we finally broke out! I grilled small filet mignon steaks with asparagus and sweet potatoes. I also made the Fixate recipe for crepes for dessert and filled them with strawberries (a-okay) and whipped cream that I whipped all on my own (def not allowed) and sprinkled with powder sugar (also probably not allowed). The crepes were hard to make and I ruined the first one. The others were kind of thick and I ripped when trying to flip, but my fourth ended up great! They actually tasted really good, although, I could have gone lighter on the whipped cream (my bad – I was just so excited). Baker’s Crust chef Lauren in the house!
Tuesday – I made two Fixate recipes (by Beachbody) for dinner – pork tenderloin with pumpkin spiced apples and sweet potato casserole. I added just a teensy bit of sugar into the apples because they weren’t that sweet, but other than that, used all called-for ingredients. This was Brandon’s favorite of all the meals!
Wednesday – this was a special day and I was allowed to eat white carbs and more of them! We went to my all time favorite sushi restaurant and it did not disappoint. 👌🏼👌🏼img_4210-e1534867799142.jpg


Thursday

Sriracha Glazed Chicken with Mango Avocado Salsa with green beans and brown rice – O.M.G. I don’t love chicken and it was just fine, but the salsa is to die for! I’ve already made it once more for a group of friends since making this meal, and it will be my go-to recipe for bringing dishes to parties. Also once I’m not limited in the amounts of fruit and healthy fats I can eat, this will be my dinner all the time. SO DELICIOUS.
FridayBeef and Broccoli with brown rice – while this is an instant pot recipe, I cooked it in the crock pot and it turned out great! The meat was tender and the sauce was very good. I liked it a lot, but always prefer beef to other meats, so that’s not saying much. img_4221.jpg
All in all, we had a lot of good, healthy meals that I will be adding to my recipe book (for alllll the cooking that I do lol). I’m so appreciative of all the foodie bloggers out there who shared these delicious recipes compatible with my nutrition plan! I know I wasn’t perfect, but it was definitely nice to have some real meals for a change (and healthy!). I’m back on the road on Sunday to head to NYC for a short trip, then finally off to Milwaukee for some more hotel living and inability to cook so helllllo raw veggies and canned tuna!

    I am a friend of your mom’s (Deep Creek alumni and in the band together – a couple of years older than her). I started following your blog when I saw it on her page and I am really enjoying it. I did an online webinar call about starting a blog and hope to get it going once I move in 2 weeks and get settled. My passion is word processing (yes, I’m weird!) but it’s what I love and do it for a living for a huge Richmond law firm. Not sure how I could get affiliates for it and other ways to make money but I’ll give it a shot. I created websites years ago when making money with affiliates was a new thing – never did make money (my friends/family said they could just go to the website directly) so I hope I can be more successful with a blog!
    I love to travel and would love a travel job like yours (only for word processing at law firms). My dream is to move to Turkey (not the best place to be at the moment) but if you ever get a chance to visit that country, it’s awesome. Istanbul and the Cappadocia area are my favorites. Maybe I’ll blog about that, too!
