Tried it! – IP Asian Style Chicken

I bought an instant pot on Black Friday (in 2018…) and have used it only once before. I’m currently doing the 80 Day Obsession Beachbody program, which has a pretty strict nutrition plan along with the workouts. Using Pinterest, I found a 21 Day Fix compliant recipe (which usually means that I can eat it on 80DO) for Asian Style Chicken with brown rice and green beans.

Beachbody Portion Fix Container Count:

  • Chicken – 1 red, 1 TSP
  • Rice (1/2 cup) – 1 yellow
  • Green beans (1 cup) – 1 green

YUM.

I reviewed the recipe and it seemed easy enough for my butt that really can’t cook all that well. I went to the store and got everything I needed and the cooking began!

I quickly realized that I didn’t have any of the accessories that I needed to cook the rice and the green beans in the instant pot, as called for in the recipe, so I still had to make those stove-top. I have experience with rice but literally didn’t know how to steam green beans (and had to google it – facepalm.).

Okay so here we go – step 1 – put the chicken in the pot. Check! (LOL)

When I was making the sauce, I couldn’t really get it to mix so it was super chunky. I ended up pouring over the chicken like this, but it all melted once it was cooking in the instant pot.

While the food was cooking in the instant pot, I steamed the green beans and made the rice stove-top, which defeats the purpose of the instant pot (to me at least), so I will be purchasing some instant pot accessories soon.

I was pleasantly surprised with how everything turned out and liked it so much that I made this for some friends when they came over later in the week! For any other inexperienced cooks in the kitchen – this is definitely an easy one!!

Finished product looked (and tasted) pretty damn good!
